Southern Tomato Pie
The iconic and revered Southern Tomato Pie! A delicious summer only dish during peak tomato season. Filled with the best summer has to offer...fresh tomatoes, green onions, chives, and basil. All covered with a gooey cheesy topping. Before you stick your nose up, you must try it! Everyone loves it!
INGREDIENTS
(1) 9-Inch Prepared Pie Shell
4 Large Ripe Tomatoes, sliced 1/2" thick, drained well
on paper towels
3 Green Onions--chopped
1 to 2 Cloves Garlic, finely chopped
Salt & Pepper, season each layer well
10+ large Fresh Basil leaves, sliced thinly
2 T. Fresh Chives, snipped small,
4-6 Strips Bacon, fried crisp, chopped into 1/4" pieces
Pinches of rosemary and thyme, dried or fresh
1 Cup Mayonnaise
1 Cup Grated Sharp Cheddar or Italian Cheese Blend
INSTRUCTIONS
Partially bake pie shell--until pale golden brown. Let cool.
Fill pie shell with a layer of tomatoes, sprinkle with some green onions, salt, pepper, basil, chives, and garlic.
Repeat layers until all ingredients are used.
Mix mayonnaise and cheese together. Spread mixture on top of tomato layers sealing to edge of crust.
Sprinkle with bacon pressing lightly into topping. Bake for 30-45 minutes at 350 degrees F. or until center is set and no liquid appears in middle when a knife is inserted in center. Can be served warm or room temperature.
