Taco Bites with Peruvian Green Sauce

It's all about the sauce and this Peruvian Green Sauce makes an ordinary taco bite, extraordinary! Keep it simple and delicious and use crispy corn dippers or take it uptown and use phyllo shells. Either way, this is a quick and delicious snack that will have all your football friends cheering for more!

Peruvian Green Sauce
1 bunch cilantro (about 2 cups), washed and trimmed
½ cup mayonnaise
½ cup cotija cheese
20 fresh mint leaves
2 Tbsp fresh lime juice
1 garlic clove 1 jalapeño pepper, quartered and seeded
Taco Filling
1⅓ lb. ground beef
1 (1½-oz) package taco seasoning
30 to 36 mini phyllo shells or crispy corn dipper shells
½ cup shredded cheddar cheese
1 tomato, finely chopped
Prepare the sauce: Place all ingredients in a food processor and blend well until combined. Chill.
Prepare the beef and shells: Brown ground beef, drain and stir in taco seasoning. Set aside. Heat phyllo shells according to package directions or use crispy corn dippers.
Assemble the taco bites: Place 2 tsp meat in each shell and top with sauce, cheese and tomato. Makes 30 servings.
